'Gypsyoven’
is an innovative mobile food business with an outstanding wood-fired
oven and bakery.
This business consists
of two fully equipped and convertible Bakeries
fitted on trailers. The smaller of the two we call 'FLEXI',
the larger 'PROFESSIONAL'.
The
custom-built trailers have an aesthetically colorful appearance
like a gypsy-wagon. They were build during 1995 to 1997 at a cost
of approx. A$ 100,000.
The
centerpieces, the Wood Fired Ovens are designed
and built by Rick U.Rickenbach and Colin Dray. The ovens have been
designed in the tradition of wood fired cooking with modern technology.
The two Wood Fired Ovens and its vehicles are different in size
and features. They have been designed for a range of different purposes
to enable great versatility and be used in a wide variety of situations.
Gypsy
Oven 'FLEXI'
The trailer measures about 1.2 x 2m in size therefore it is considerably
smaller than its larger brother. There is no cool-room on this trailer
and it is not equipped with lights or power points.
All the equipment, like work- and service benches, tables and chairs
etc. as well as firewood and frame for canopy etc. will fit into
it.
The frame for the canopy roof is made out of mild steel, extremely
strong and is easy to setup within an hour. All of this gets stored
in the trailer.
The oven has a baking surface of 1.2 m2 and is fan-forced like the
'PROFESSIONAL'. Its capacity is, using the pizzas as an example
again, approx. 100 pizzas per hour.
This unit comes with a Dough mixer, Pizza Dough Roller and lots
of other equipment.
Gypsy
Oven 'PROFESSIONAL'
The trailer is custom-designed and professionally
engineered. It has two axles with electric brakes and is equipped
with a break-away safety system. The tow-bar can be folded up to
optimize the working area. The bottom part of the trailer provides
storage facilities for firewood, work-benches and the batteries
used for backup lighting and the break-away safety system.
The battery compartment also
contains the safety switch and plug-in point for the mains power
supply. There is room on the trailer to put away the canopy and
the workbenches as well as flooring. The fully setup bakery covers
an area of approx. 6m x 7.5m, which can be divided into 2/3 for
the production area and 1/3 for storage or for 15–20 under
cover seating.
Alternatively the seating can be taken out and the trading- or/and
working area can be extended to add products. Around the top of
the trailer you will find 6 power points for 240V and 3 for 12V
as well as 2 inbuilt lights.
The cool-room
runs on the main power and can also be connected to an alternative
energy system. A 500lt stainless steel water storage tank
is attached to a 12V pump which provides the water supply for an
independent and flexible operation.
The Wood
Fired Oven, which is suitable for baking bread, bakes evenly
throughout and is highly efficient on wood. It runs substantially
cheaper than ovens on any other fuel and is fan-forced. It can bake
for example as many as 150 Pizzas (diameter of
30 cm) per hour and can be operated continuously
for days without having stops for re-firing. It can also keep the
temperature relatively stable during the bread baking process. The
oven has anchor points for a boiler and a steam engine as well as
a shaft on bearings. This has been designed to produce its own alternative
energy, running the equipment in situations where power would not
be available or too expensive. This feature has not been completed.
The Steam
Engine and Boiler are built and designed by Rod Muller
from SA (one of the leading people in this field in Australia) and
stage approved for commercial use in Australia by Workcover. The
steam engine, boiler and instruments for its installation are available
on request, but are not considered part of this offer.
The hot water system is an addition which gets its heating energy
from the oven. All plumbing gear like pipes, sink and taps are part
of this proposal.
The light weight aluminium frame structure of the stall is extra
strong and easy to assemble. It is interconnected with the trailer
for stability. The stall offers multiple setup option and is very
flexible and easily adapted to any reasonable ground condition through
its adjustable sliding system.
The roof covering and walls are made out of extra strong PVC and
canvas.
Gypsy Oven 'PROFESSIONAL'
comes with a Dough mixer, dough roller, Cappuccino machine (one
of the two machines on option is converted to be run by the steam
engine) and lots more.
'FLEXI'
AND 'PROFESSIONAL'
The ovens are mainly made out of steel, stainless steel and bricks
and they can be used to bake a wide range of food; however, gourmet
pizzas have proven to be the most popular for me, working at outdoor
events.
As a Market- and Festival Stall, Gypsy Oven is well recognized and
respected by the organizers of markets and festivals along the east
coast of Australia.
The colourful appearance of the stall is eye-catching and charming,
attracting the interest of young and old alike. Customers can observe
the pizzas being made as they order and wait for their meals.
Gypsyoven is a terrific business and will give the right person
a lot of options and flexibility as it can be towed to any location,
setup and fired up. It will also give you the choice to elect, when,
where and how much you want to work.
Possible
potential for Gypsyoven:
- It can be set-up at home to then
build up a customer base instead of investing in a bakery at a
high cost, a fixed location and entering into a long-term lease.

the Festival circuit and financing the trip at the same time.
